The history of its appearance leads to France. Having decided to surprise Count Orlov, the favorite of Catherine II, the chef Urbain Dubois gave free rein to his imagination and created a masterpiece from familiar products.

Count Orlov highly appreciated the efforts of the cook, as a result of which the dish was named Veau Orloff, which literally means “Orlovski veal”.

Modern recipes have undergone significant changes, but as a result, connoisseurs of original treats have received several different options for preparing delicious meat.


Let’s start with a classic recipe. We are sure you will like it. You will need:

  • veal tenderloin – 500 g;
  • potatoes – 3 pcs.;
  • onion – 2 pcs .;
  • hard cheese – 150 g;
  • spice.

To fill:

  • fat cream – 125 ml;
  • broth or water – 150 ml;
  • flour – 1.5 tablespoons;
  • butter – 30-40 g;
  • nutmeg.

Cut the potatoes into slices and place on the bottom of a baking dish. Cut the meat into slices of medium thickness and beat well – this will be the second layer. The third is wide onion rings, followed by cheese.

In the original recipe, it should be thin slices.

For the Bechamel sauce, melt the butter in a saucepan or small saucepan and add the flour. It is important not to forget to mix well so that no lumps form in the sauce.

Then pour in the broth and cream, boil until thickened, season with nutmeg and distribute evenly in the form.

Bake for 50-60 minutes.

With pineapples

Exotic pineapple and mayonnaise will add special juiciness to tender chicken meat. You will need:

  • chicken fillet – 0.5 kg;
  • onion – 1 pc .;
  • cheese – 200 g;
  • pineapples – 150 g;
  • mayonnaise;
  • spice.

Fillets can be cut into portions or cut lengthwise and beat off. Sprinkle with salt and pepper. Pickle the onion rings in vinegar with a little sugar.

Lay the chicken and onions in layers on the deco covered with parchment, sprinkle with mayonnaise and do not forget about the pineapples. Sprinkle generously with grated cheese and place in the oven for 20-30 minutes.

With vegetables

This is a frequent guest at festive tables. And it is not surprising, because the combination of tastes will delight and surprise. Required products:

  • pork – 0.5 kg;
  • tomatoes – 3 pcs.;
  • onion – 2 pcs .;
  • champignons – 150 g;
  • hard cheese – 100 g;
  • goat’s milk cheese – 50 g;
  • mayonnaise;
  • salt pepper.

It is better to take pork fresh. During the freezing process, it loses its juice and its taste. It is preferable to use a loin.

Cut the meat into steaks no more than 1 cm thick, beat off, season with spices. Put on deco, spreading onion rings on top, apply a net of mayonnaise. If you want to make a dish without mayonnaise, you can use sour cream or plain yogurt.

On top of the mayonnaise, distribute the mushrooms and tomatoes cut into plates and add a little salt.

Put thinly sliced ​​cheese and send to bake for 40-50 minutes.

If you want to make the dish more original, prepare a special sauce. For example, pomegranate. For him, 50-70 g of pomegranate juice must be combined with 2 tablespoons. Dijon mustard and 2 cloves of garlic, minced or squeezed through a press. Mix thoroughly and pour over the meat.
