Dry biscuit is a special and at the same time very simple baked goods, which do not use fat and yeast in the cooking process. And this means that even those who monitor the amount of calories eaten will be able to please themselves with such a delicacy.

What’s for dessert?

Dry biscuits came to us from French pastry chefs, but did not take root for a long time, since our compatriots preferred soft baked goods.

But as soon as one tasted the French delicacy, no one could refuse it. You can use it as a base for cakes or enjoy the original taste with a cup of your favorite drink.

Baking is considered ideal if the inside is porous and soft, and the outside is covered with a light but dense crust.

And we will, of course, share some secrets with you.

First of all, you need to carefully monitor that the yolk is carefully separated. After all, even a small amount of it will not allow you to beat the eggs to the desired state.

The airiness will provide a simple process like sifting flour. Slow stirring of the ingredients also contributes to this result.

Soda and baking powder must be discarded, because this can lead to uneven porosity, and lumps may be noticeable in the cut that could not be stirred.

On kefir

This delicacy is prepared quickly enough, therefore the recipe is perfect for those who want a tasty quick fix. You will need:

  • flour – 80 g;
  • sugar – 150 g;
  • egg white – 6 pcs.;
  • lemon juice – 1 tablespoon;
  • a pinch of salt.

It is very important to handle the dough carefully so as not to disturb the appearance of bubbles during preparation.

Proteins must be pre-chilled, this is a prerequisite.

Beat them with lemon juice until foam appears, add half of the sugar and beat until it is completely dissolved.

Combine with flour, to which you first need to add the second half of sugar and salt. Stir gently and pour into mold. Bake for half an hour at 180 degrees.

You can decorate baked goods with whipped cream and fruit.

With prunes

With just a few simple products, you can make a delicious cake that your loved ones and guests will surely appreciate. You will need:

  • flour – 150 g;
  • eggs – 3 pcs.;
  • sugar – 120 g;
  • powder – 2 tablespoons;
  • low-fat yogurt – 200 g;
  • prunes.

Grind the yolks with sugar until foam appears and increase in volume. Then gradually add flour and knead the dough.

Beat the whites separately. You can add a few drops of vinegar to these to make the process easier. This should be done until stable peaks appear.

Very carefully, so as not to spoil the peaks, introduce the resulting foam into the prepared base. Put in a mold and bake for 30 minutes.

After cooling, cut the biscuit into two cakes, grease with whipped yogurt with powdered sugar, put pre-steamed in hot water and chopped prunes.

For him, starch is added to the ingredients. This allows for greater porosity. Another plus – during the cutting process, the baked goods will not crumble. You will need:

  • eggs – 6 pcs.;
  • sugar – 1 tbsp.;
  • starch – 50 g;
  • flour – 1 tbsp .;
  • vanillin.

Grind the yolks with sugar. Combine the rest of the dry ingredients, add the yolks and knead. Put the protein foam in the dough and put it in the oven for 1 hour.
